Dressing 1 TBS lemon juice 4 TBS syrup 2 TBS brown sugar 1 TBS balsamic vinegar 1 teaspoon ginger 1 teaspoon cinnamon 2 TBS pineapple juice 2 TBS honey Mix in a small bowl 3 lbs. sweet potato (cool and cut to bite size) 1/4 cup red onion (small dice) 2 TBS parsley (fresh) 1/4 cup walnuts (chopped) 1/2 apple (small dice)
Combine the red onion, walnuts, parsley, apple, sweet potato, and the dressing. Mix bye hand. The spoon will turn it to mash which you don't want. Chill for 3 hours or more.

Marty, sweet potatoes are not a staple where I live, rather a treat once in a while. This recipe sounds scrumptious!
