Chicken Rub

1 TBS salt
1 TBS garlic powder
1 TBS coriander seed
1 TBS ginger
1 TBS cumin seed
1 TBS mace
1 Teaspoon pepper

Place chicken on a rack in a pan and coat the bottom of the pan with water. Cover the pan with foil. Place in oven for 300F for 15 mins. Then turn the heat up to 350F for 30 mins. Remove the foil when 10 mins. cooking time is left.
