1.25 red onion 3 shallots 1 bunch of scallions 6 carrots above must be medium dice 1 turkey wing (large) 3 quarts of turkey stock 0.25 bunch of parsley 0.5 cup white wine 2 pieces of garlic (finely chopped) 0.5 cup brown rice salt and pepper Sweat the onions and carrots for 3 minurtes. Add the turkey wing for 5 minutes. Add wine and garlic for 1 minute. Add stock and cover for 1 hour. Turn down the heat don to low. Parboil your rice. Add rice and parsley. Simmer for another 45 minutes. Take the turkey wing out and let it sit for 5 minutes. Pull the turkey wing a part and toss the turkey back in he pot and serve.
