10 Pounds Tomatoes (plum)
2 Reds onions
3 Stalks of celery
1 Carrots

Dice all above in any size you want. Toss in the onions, celery, and carrots the pot for 5 mins. Add the tomatoes in and cook it down for 5 mins.

2 Peppers (1/4 inch diced)
36 oz Tomato paste
36 oz Water
3 Bay-leaves
1/4 Cup basil (chopped)
1/4 Cup parsley (chopped)
Salt and pepper to taste
Add these to the pot and stir. Bring to a simmer for 1.5 hours. It should be an red orange color look. Puree before you add the peppers.
